When I see a recipe that’s subtitled “The Stir Fry that Got Me Married,” I’m immediately intrigued. My husband and I are both big fans of Thai food. We also have a 4-year stockpile of peanut butter (our Costco did not have their Kirkland creamy peanut butter for like 6 months one time, and we ran out. Never again.) So I knew the Thai Peanut Stir Fry had to be the first recipe I tried from Erin Clarke’s Well Plated.
There is a Thai food restaurant near us that has yummy spring rolls with the most amazing peanut sauce. I’ve been trying for years to recreate something even half as good at home, and I’ve had some spectacular fails. I’ll be honest – between that, and my high expectation of a recipe that may have sparked a proposal, I went into this one a little apprehensively.

I didn’t do much different for this one. For veggies, I used red bell pepper, broccoli and carrots.

Should you make the Thai Peanut Chicken Stir-fry?
Definitely! This dish checks all the boxes:
- It’s healthy
- It’s pretty (even for someone with my lackluster plating skills).
- It also comes together quickly, especially if, like me, you prep the vegetables and sauce ahead of time.
- It’s tasty. Maybe not marriage-proposal phenomenal, but my husband gave it the thumbs up and my child ate a bite of the chicken.
- The peanut sauce! My quest to find a good homemade one is over, and I can see using this sauce in other dishes, or maybe even as a marinade.
Pro Tips for Busy and/or Lazy People
This is a dish that can come together fast if you’re able to buy pre-shopped veggie mixes. Our grocery store sells fresh stir fry veggies mixes, but you can also use frozen. I find chopping therapeutic though, so when I have time, I go on a chopping binge and chop all my veggie for the week in one go.
If cutting raw chicken grosses you out or you find it difficult, try popping it into the freezer for an hour or so before you begin handling it. Begin slightly frozen will make it easier to cut, plus it’s a little less slimy. Make sure to wash your hands and decontaminate your surfaces afterwards though!
