I love, love, love Taco Tuesday. I mean really, who doesn’t? But as much as I love our standard crispy beef tacos and chicken fajita tacos, sometimes I want to switch things ups. I came across this steak taco recipe from The Original Dish while searching Pinterest for inspiration, and immediately ready to give it a try. I’m always trying to figure out how to pack more veggies into my tacos, but raw cabbage slaw can be really hit or miss.

Make or Skip these Steak Tacos with Chipotle Sauce and Roasted Cabbage
Seriously, make these. Like, tonight, even it’s it’s not Tuesday.
First off, the roasted cabbage. After chopping up the roasted bell pepper and red onion, I mixed them in with the cabbage and snuck a taste. It was surprisingly good. So good that by the time I served the tacos, there was considerably less.
The chipotle sauce was a nice bonus (although honestly, I would’ve eaten these without it). It had just the right balance of sweet and spicy, although I did cut back on the actual amount of chipotles. I’ve reached that age where everything gives me heartburn.
I always have a hard time with skirt steak coming out chewy. I bought a tenderized on e this time and very carefully sliced it as thin as I could. Definitely better than some of my previous attempts, but I still need to work on getting it just right.
