I don't think there's a recipe that could scream "FALL" more than this Butternut Squash, Chicken and Wild Rice Casserole from Erin Clarke’s Well Plated.I'm not much of a casserole person because they're usually too heavy or starchy for my taste, and rarely have enough veggies. If there's one thing I know my child will always eat, it's pizza. If there's one thing I know that doesn't work for me, it's super carb-y meals. Still, we try to compromise and choose restaurants he'll like sometimes, which means I need to get creative about ordering sometimes. Enter meatballs.
